Go to Trader Joe's & buy:
Pie Crusts (frozen)
Organic Vegetable Foursome (frozen)
Cream of Portabella Mushroom Soup
Step 2:
Let the Pie Crust defrost.
Preheat oven to 350.
Step 3:
Drizzle oil on the bottom of your deep pie dish. Coat the entire surface of the dish. Use a piece of a paper towel to ensure the dish is well greased.
Step 4:
Unroll the pie crusts. Line the deep pie dish with one of the circles of pie crust. Being sure to press all of the pieces of the pie crust into each other and covering the entire bottom of the dish.
Step 5:
Open the frozen bag of vegetables into the dish. Take out about 2 cups of vegetables. Leaving a filled dish with about an inch from the top of the dish. Place the leftover vegetables in a ziploc & put it in the freezer to eat later :)
Step 6:
Open the Mushroom soup container. (I always have to use scissors.) Once opened, dump the entire contents onto the pile of vegetables. Then fill up 1/4 of the soup container with water. Use a spoon to stir the leftover soup in the container & get all of the residual soup out. Pour the mixture into the dish.
Step 7:
Stir the vegetable & soup mixture. Being sure to avoid the bottom of the dish pan which is covered in pie crust. Continue stirring until all of the ingredients have been mixed together.
Step 8:
Take the last circle of pie crust & begin covering the top of the pie. Begin the pie crust from the highest point of the veggie soup mixture. Connect all of the broken pieces to make sure there aren't any gaps.
Step 9:
Use a cookie cutter to cut out shapes with the remaining pie crust. I always have a Ton left over so I can make some pretty cool designs!
Step 10:
Place pie in oven. I believe it takes about 35 minutes to cook. (I never time anything so I'm guessing.) When you begin smelling the pie, start checking on it. Once the top crust is a golden brown it's time to take it out of the oven!
