Here goes everything!
-1 package of Beef-less Trader Joe's
-Can of Pickle Juice Brine
-Garlic Powder
Take the Beef-less out of it's packaging and put it in a container. Pour the Pickle Juice on top. Making sure to fill it up to the Beef-less. Cover with Garlic Powder. Overnight, let it marinade in the fridge.
St. Patrick's Day:
-1 Tbsp Olive Oil
-1 Chopped Garlic Clove
-1 package of Trader Joe's frozen Brown Rice
-1 beaten egg
-1/2 cup of bread crumbs (or Stove Top stuffing if not Vegetarian.)
-Add 2 Tbsp Ketchup
Heat up a tablespoon of Olive Oil in a large pot. Add the half of the chopped garlic clove. When it gets glossy, it's done. Take out the Beef-less and add it to the pot. On a low heat let it stew. Slowly add the package of brown rice. Stir slowly. Fold in the beaten egg. And keep stirring the mixture. Next, add the bread crumbs and add ketchup to the mix.
-Head of Cabbage
-1 pkg of Veggie Broth
-3 Idaho Quartered Potatoes
-4 Chopped Carrots
-1 can of whole tomatoes
Meanwhile, peel off 12 Cabbage leaves
Wash Em.
Put them in boiling water. Once, soft drain Em.
Take the left over Cabbage and chop it in quarters. Grab a large pot and fill half way with Veggie Broth. Add the quartered Idaho Potatoes and chopped Carrots. Cover Em, with Low heat to let them boil. Be sure to check often and if it looks like it needs water add it freely. We want these mushy.
Once, the Beef-less mixture is mixed well together. Take it off the heat.
The Cabbage leaves are done when they get wilty. Drain Em.
And run cold water over Em until they are cool to touch.
Hold one Cabbage leaf in the palm of your hand. Let the edges hang over. Scoop up the Beef-less and put it in a row. Roll over the leaf from the bottom to cover the mixture. Fold the sides over it. And roll it until all of the mixture is covered. Place the Stuffed Cabbage Leaves into the pan with the seam side down.
Continue doing this until all 12 are done.
Place the Whole Tomatoes on top of the Stuffed Cabbage Leaves. Use your hands to smush the tomatoes.
Finally, put the pan in the oven at 350 for 20 minutes.
Check on the Potatoes and Cabbage. If it needs water, be sure to add it :)
Once everything is done High Five Yourself :)))
& Place everything on a plate! And with yellow mustard write "Happy St. Patrick's Day!"*

Growing up, we would have Corned Beef & Cabbage with beer in it.
All these years later, my St. Patrick's Day dinner is sober with no meat. Only a happy evening of meet :)
