Swedish Veggie Meatballs

Took an old recipe and added more ingredients got rid of the meat and made it better ;) 

Here's what you will need: 
-Olive Oil
-Chopped Garlic Clove
-Bag of Frozen Veggie Meatballs Trader Joe's 
-1/4 stick of salted Butter
-1/2 Cup of Flour 
-3 Cups of Veggie Stock
*My FAVORITE is Rachel Ray's 
-1/2 Cup Sour Cream 
-1 Chopped Onion
-Dash Soy Sauce 
-Package of Sliced Mushroom 
-Egg Noodles 

How to: 
First things first, bring large pot of water to boil & once boiled cook the egg noodles! 
Meanwhile...
Coat bottom of large sauce pot with Olive Oil. Add chopped Garlic cloves. Glaze Garlic. Add entire package of TJ frozen Veggie Meatballs. Stir together. Once cooked take the meatballs out & put in large bowl. 

Add 1/4 stick of Salted Butter to the pot with leftover residue. Gradually add in 1/2 cup of flour. 
Roux together with a Whisk. Add 2 cups of Veggie Stock. Whisk everything all together constantly. Making sure to get out all of the lumps. Add 1/2 cup of sour cream. (The smell of Sour Cream will be very strong. But don't worry it's not ruined!!! I got scared too & I fixed it with the quickness!) 

Now, add 3 big dashes of Soy sauce. This is great Bc it adds more color and some salt. Stir in 1 Cup of Veggie Stock. Whisk it all together. Fold chopped Onion into the mixture. Scrape the bottom of the pot to make sure it's all mixed well. Add meat balls back in. One good mix. 
Take it all out and put it back into the big bowl again. 

Add butter to the pot while scraping the bottom and sides. Slowly add the Mushrooms. Let the Mushrooms cook until they shrink in size and turn darker in color. Keep mixing. Dump ALL the yumminess from the large bowl! Combine it ALL together. 

Serve the egg noodles on plates and pour the Swedish Veggie Balls on top!
