Grew up eating the best food!
My mom, Barb is a chef.
She concocts meals out of thin air.
For serious.
Watching her cook is like watching a Magician pull doves out of top hats.
Still not sure how she does it.
Empty cupboards became gourmet feasts.
Barb makes magic happen.
Soooo...
I was craving her hardy winter dinners. This is one of her go-to's to heat you up from the inside out :)
BeefLESS Stroganoff:
-Olive oil
-1/2 package cut onions TJ
-1/2 package of sliced mushrooms TJ
-4 chopped baby carrots TJ
-1 cubed 🥔 potato
-2 tbsp flour
-1 cup water
-West Soy Seitan cubed TJ*
-1/4 cup of frozen pees TJ
-1/2 bag of NO YOLKS enriched Egg white pasta
Directions:
In a wok styled pan, coat the bottom with Olive Oil. Add the onions. Let the onions get glazed. Then add the mushrooms. Coat the top of the mixture with more Olive Oil. Keep stirring and add more Olive Oil if the mushrooms begin to stick to the bottom of the pan. Use the Olive Oil generously. Fold the carrots into the mixture. Being sure that they are covered by the Olive Oil. The goal is to keep the mixture from sticking to the bottom of the pan. Continue to stir with a wooden spoon. Add the potatoes and mix it all together. Generously add more Olive Oil if needed. Let the mixture stew on a medium heat until the potatoes are cooked through. Being sure to mix to prevent anything from getting stuck to the bottom of the pan (this is your full-time job for the next 5 minutes!!!)
Meanwhile, in a Pyrex whisk together the flour and water.
Using the whisk pour the flour water into the pan being careful to fold the mixture together. Once, combined be sure to scrap the bottom to get all that good stuff into the mix. Add the frozen pees and Seitan* gingerly. Let it stew on a low heat until the pasta is done.In another pot, Bring water to boil for the Egg Noodles. Once boiled, drain. Put the noodles on the plate and drape with the Stroganoff.

The Seitan was GUROSS.
I def will not make it with it next time. I picked it out of my plate and nothing was missing to the mixture.

Ps: I have another Barb recipe I made earlier this week that used half of the ingredients from this one. I'll have to remake to take pics and share. Great excuse to make it again! ;) Both make perfect winter meals so it works perfect! Post to come next week fo sho :)
