Barb's ChickenLESS Stir Fry

Another comfort food dinner from my mom, Barb! 


Super easy to make. 

Also, I should mention that Barb cuts all her own vegetables. I am lazy and don't. And probably will never. TJ has packaged pre-cut onions, mushrooms, broccoli...and I buy them ALL happily. Barb gets grossed out by that. She says "Who cuts it?!?! How do you know they are clean? That they washed their hands before chopping? Or if something falls in to the mix you will never know."


Ugh.

The convenience of not chopping outweighs the inherent risk of grossness. 


ChickenLESS Stir Fry:

-Olive Oil

-TJ Chopped Onions 1/2 container

-TJ Organic frozen broccoli 1/2 bag

-TJ sliced mushrooms 1/2 package 

-TJ ChickenLESS Package 

-Soy Sauce dash 

-Flour 2 Tbsp

-Ginger 


Directions: 


Add Olive Oil to the bottom of a Wok style pan. Then sprinkle in 

the onions. Let them sauté and glaze. Add the TJ Organic frozen broccoli to defrost. 

Add TJ sliced mushrooms. 

Cover it all with more oil. The more the better Bc we don't want anything to stick to the pan bottom. Let it cook to brown. Once done add the ChickenLESS. 


Then take the combo out and put in a bowl.

Add Soy Sauce to the Wok bottom and scrap the bottom. Add 1 cup of water and 2 Tbsp of flour in a Pyrex and whisk away.
Slowly pour the mixture into the pan and using a metal whisk scrape the sides to get all the good stuff off of the bottom of the pan. Add ginger.

Keep stirring till thick. Once, it's the thickness you prefer add the mixture back in. Heat it up a bit and then you are done!!!

-pairs well with white rice!

Been cooking so much more at home. Self-Care is a huge deal for me these days. And cooking for myself helps me take care of me :)))
