🥫🍝🥫EZ! Trader Joe’s Pasta Fagiole 🥫🍝🥫

Yummy 😋! 


Ingredients! 


Trader Joe’s shopping list:

1) mirepoix container 🥕 🧅 

2) great northern beans 

3) chunky salsa🌶

4) elbow pasta 🍝

5) veggie stock🧃

6) olive oil 

7) fresh garlic🧄

8) ground Oregano 🍃

9) S&P🧂

10) pecorino Romano grated cheese🧀


Here’s the steps: 

-Olive oil on bottom of sauce pot.

 

-1 clove of garlic chopped fine added to the hot oil. 🧄


-Once garlic is cooked add only the onions from the Mirepoix mix. 🧅


-Let the onions cook and get that mushy glazed look. Then add the carrots and celery. 🥕


-Add more olive oil on top. (And oil any time it starts sticking to the bottom.) 


-Add elbow pasta to you the top of the cooked mixture. The amount of the elbow pasta I always use is like a 1/4 of the box. Making the soup equal parts mirpoix and pasta. If you like more pasta add more! 🍝


-Add 1 can of great northern beans. & mix everything together again. 


-Add salt & pepper to the mix. 🧂


-Add chunky salsa. Totally up to you how spicy you like it. Earlier, I dumped the whole thing and my mouth is on fire. But, I’m a weanie with hot stuff. 🌶


-Mix everything together and let it cook for a little bit. 🥄


-Then add one package of Veggie Stock and stir.🧃


-Add salt and pepper to the top. With some oregano. Let it simmer. 🧂


-Keep an eye on it to wait till it gets to the consistency you like. If it burns out a lot of the liquid don’t worry just add more veggie stock or boiling water. 🧊


-that’s it! Serve with a lot of grated cheese. The pecorino Romano is the best on top. 🧀

I make a batch of this soup and reheat it every day for a week. Just feel safe knowing it’s in my fridge and I won’t go hungry. Right now more than ever we have to eat veggies and self-care is paramount.
